Spiced Lamb Patties Recipe

Try this easy recipe to impress your family and friends.
Ingredients
2 tsp cumin seeds
1 tsp ground ginger
1 tsp ground turmeric
pinch chilli flakes
1 tsp curry powder
1 tsp cardamom pods
110g/4oz minced lamb
1 tbsp chopped fresh mint
1 lime, juice only
salt and freshly ground black pepper
6 vine leaves
To serve
85g/3oz quick-cook rice, cooked according to packet instructions
2 tbsp olive oil
freshly ground black pepper
handful fresh coriander leaves, chopped
1 lemon, juice only
Method
Grind the cumin seeds, ginger, turmeric, chilli flakes, curry powder and cardamom pods in a pestle and mortar. Place the spices into a bowl.
Add the lamb, mint, lime juice and salt and pepper and mix together until combined.
Lay the vine leaves out flat and spoon the mixture between each one. Wrap up to form little parcels and place in a steamer set over a pan of simmering water. Put the lid on and steam the patties for ten minutes, or until the lamb is cooked through.
Mix the cooked rice, olive oil, pepper, coriander and lemon juice together in a bowl.
To serve, spoon the rice onto a serving plate and serve the lamb patties on top.
