Mixed pepper omelette

Omelettes take just minutes to create - so by adding just a red and a yellow pepper you can make a double-quick succulent meal. Serves 2.
Ingredients
4 large eggs
1 yellow pepper, sliced
1 red pepper, sliced
Salt and pepper
Method
Beat the eggs together with salt, pepper and a teaspoon of cold water. Pour the mixture into the pan on a high heat and cook for 2 minutes.
As the egg begins to set, add the strips of pepper to the centre of the omelette, then use a spatula to push the set egg towards the centre.
Repeat this until the entire mixture is set and cook for another minute before loosening the edges and folding the omelette in half.
Finally tilt the pan and slide the omelette onto a warm plate.
Serve on its own or with a fresh mixed leaf salad.
Twist: you can also add your favourite fillings such as cheese, ham, mushrooms, tomatoes or even chicken tikka.
