Crumpet Pizzas for the kids

Crumpet pizzas are an easy-to make snack for the kids when they get in from school.
Not only are they ultra quick to make, but as they are mini-pizzas, you can raid the cupboards or fridge and add any topping you like! Makes 4.
Ingredients
• 4 Crumpets
• 4 tbsp tomato ketchup
• 100g Red Leicester cheese grated
• Then add your favourite toppings like: pineapple, ham, pepperoni, tuna, cherry tomatoes or mushrooms.
Method
Preheat grill to medium. Toast the crumpets on both sides and spread tomato ketchup on the top.
Top with cheese and favourite toppings.
Grill until the cheese is melted and serve immediately.
Twist: If you like, substitute English muffins for the crumpets – they are no lower in calories than bread, but they are more sturdy than crumpets and make solid pizza bases.
